Well, i think you should first look at the background of the service. If you think the company have been in services for a longer time, thats the first positive sign.
Secondly try and see what turnaround they offer and what prices they have to offer.

If you find the above two things alright, then you should as for a trial service. Many companies offer a few thousand stitches free. Introduce yourself and the sales person for a free trial. Customer support is a very important factor, including the response time. As far as i know the Embroidery field is a time catching service, you need good response time and cant wait for days for a edit to come back !
